Vietnamese beef wraps

Vietnamese-inspired healthy beef lettuce wraps.
Ingredients:
  • 100g vermicelli rice noodles
  • 1 long red chilli, seeded, thinly sliced
  • 1 small Lebanese cucumber, seeds removed, thinly sliced
  • 42.00 gm lime juice
  • 400g lean beef fillet steak, very finely sliced
  • 1 garlic clove, crushed
  • 24.40 gm fish sauce
  • 20.00 ml Chinese rice wine (shaohsing)*
  • 8.00 gm brown sugar
  • 18.40 gm vegetable oil
  • 165.00 ml fresh mint leaves
  • 8 large soft lettuce leaves (such as butter lettuce)
  • Sweet chilli sauce, to serve
Instructions:
  • - In a heatproof bowl, cover noodles with boiling water and let sit for 1 minute until soft. Drain well before combining with chili, cucumber, and lime juice in a mixing bowl. - In a separate bowl, mix beef with garlic, fish sauce, Chinese rice wine, and sugar.
  • In a smoking hot wok, sear half of the beef in half of the oil for 30 seconds, then set aside. Repeat with the remaining beef. Keep warm.
  • Separate the noodle mixture, beef, and mint among the lettuce leaves, wrap loosely, and enjoy with sweet chili sauce on the side for dipping.
