Vietnamese beef patty and spring roll salad

Savor the flavors of Asia with this irresistible Vietnamese beef patty and spring roll salad.
Ingredients:
  • 500g packet packet 3 star beef mince
  • 1 tsp minced garlic
  • 24.40 gm oyster sauce
  • 21.00 gm light soy sauce
  • 10.60 gm dark soy sauce
  • 9.00 gm sugar
  • 62.50 ml finely diced spring onion
  • 48.80 gm fish sauce
  • 42.00 gm lime juice
  • 18.40 gm vegetable oil
  • 1000.00 ml rice vermicelli, cooked according to packet instructions
  • 250.00 ml bean shoots
  • 250.00 ml fresh coriander
  • 62.50 ml roughly chopped peanuts
  • 1 long red chilli, finely sliced (optional)
  • 10 cocktail spring rolls, cooked according to packet instructions
  • 250.00 ml fresh mint
Instructions:
  • For the patties: In a mixing bowl, combine beef mince, garlic, oyster sauce, soy sauces, sugar, and spring onion by hand. Shape about 1 tablespoon of the mixture into a patty, then repeat with the rest of the mixture.
  • In a small mixing bowl, whisk together fish sauce, 1-2 tablespoons of water, lime juice, and sugar until the sugar is completely dissolved.
  • For beef patties, heat a large frying pan over medium heat, add oil, and sear each side for 3 minutes until fully cooked. You can also grill them on the barbeque for a smoky flavor.
  • Combine rice noodles, fresh herbs, bean sprouts, peanuts, chili, and salad dressing in a mixing bowl and toss together.
  • Divide the noodle mix among bowls, top with beef patties and spring rolls, and sprinkle with additional herbs for extra flavor, if desired.
