Vietnamese Grilled Pork Skewers

Marinate pork skewers in Vietnamese flavors, grill, and serve with zesty garlic-lime dipping sauce.
Ingredients:
  • 1 pound pork belly, cubed
  • 1 fresh red chile pepper, minced
  • 3 stalks lemongrass, minced
  • 3 tablespoons fish sauce
  • 3 cloves garlic, minced, or more to taste
  • 1 teaspoon monosodium glutamate (MSG)
  • 1 teaspoon white sugar
  • 1 teaspoon Chinese five-spice powder

  • 0.25 cup fish sauce
  • 0.25 cup white sugar
  • 1 fresh red chile pepper, minced, or more to taste
  • 1 lime, juiced
  • 5 cloves garlic, minced, or more to taste
  • 1 teaspoon monosodium glutamate (MSG), or to taste
  • 1 cup water
Instructions:
  • In a bowl, mix pork belly, 1 red chile pepper, lemongrass, 3 tablespoons fish sauce, 3 cloves garlic, 1 teaspoon MSG, 1 teaspoon white sugar, and five-spice powder. Cover with plastic wrap and refrigerate for 1 to 3 hours to marinate.
  • Combine fish sauce, sugar, red chile pepper, lime juice, garlic, and MSG in a bowl. Allow the flavors to blend for 30 minutes to 1 hour. Stir in water.
  • Skewer the marinated pork belly onto bamboo skewers.
  • Preheat the grill until it's piping hot and brush the grate with a light coating of oil. Grill the pork skewers until they are crispy, turning them occasionally, for about 8 to 10 minutes. Enjoy them with the savory dipping sauce.
