Indulge in a delightful dessert to elevate your Monday mood.
Ingredients:
  • 9.00 gm gelatine powder
  • 375g pkt cream cheese, at room temperature
  • 4.40 gm vanilla essence
  • 115g caster sugar
  • 300ml thickened cream
  • 2 x 145g pkts Violet Crumble bites, roughly crushed
  • 7 frozen waffles, toasted
Instructions:
  • Prepare a 28 x 18 cm rectangular slice pan by lining its base and sides with non-stick baking paper.
  • Sprinkle the gelatine over water in a heatproof bowl, then place it in a saucepan over simmering water. Stir until the gelatine has dissolved, and let it cool slightly.
  • Mix the cream cheese, vanilla essence, and sugar with an electric beater until smooth. In a separate bowl, whip the cream until soft peaks form using clean beaters. Gently fold the whipped cream into the cream cheese mixture along with the gelatine and half of the Violet Crumble.
  • Cut the waffles to perfectly fit the pan. Spoon the creamy cheese mixture into the pan, ensuring a smooth surface. Chill for 2 hours until firm. Sprinkle with the rest of the Violet Crumble before serving.
