Easy Tim Tam cheesecake

Easy no-bake Tim Tam cheesecake topped with honeycomb crunch from Violet Crumble.
Ingredients:
  • 2 x 250g pkts cream cheese, chopped, at room temperature
  • 900ml thickened cream, plus 150ml, extra
  • 60ml (1/4 cup) warm water
  • 9.00 gm powdered gelatine
  • 2 x 330g pkts Tim Tam Original
  • 200ml double cream
  • 250ml (1 cup) cold milk
  • 50g (1/2 pkt) Chocolate Dessert Mix
  • 50g Violet Crumble bar, coarsely chopped
  • Chocolate sauce, to drizzle
Instructions:
  • Prepare a round 22cm springform pan by lining the base and side with baking paper. In a large bowl, use electric beaters to blend the cream cheese and thickened cream until smooth. In a small heatproof bowl, combine warm water with gelatine and stir until dissolved, then place it in a larger heatproof bowl. Pour boiling water into the larger bowl until it reaches halfway up the side of the smaller bowl. Let it sit for 5 minutes until gelatine dissolves, stirring occasionally. Add the gelatine mixture to the cream cheese mixture and beat until combined. Spoon 1 cup of the cream cheese mixture into the prepared pan and use a spatula to smooth the surface.
  • - Line the inside edge of the pan with a layer of Tim Tams, standing them upright with a 1cm gap between each. Press them gently into the cream cheese mixture. Spoon the rest of the cream cheese mixture into the center of the pan, smoothing it out with a spatula. Slice 3 Tim Tams and set aside. Coarsely chop the remaining Tim Tams and mix into the cream cheese mixture. Cover with plastic wrap and refrigerate for 4 hours or overnight until set.
  • Gently lift the cheesecake out of the pan onto a serving plate. Spread the double cream on top. In a bowl, beat the cold milk and dessert mix for 1 minute. Put the chocolate mixture in a piping bag with a 1cm plain nozzle and pipe swirls around the edge of the cheesecake. Whip the extra thickened cream until soft peaks form, mix with any remaining chocolate, and spoon onto the center of the cheesecake.
  • Top with chopped Violet Crumble, sliced reserved Tim Tams, and a generous drizzle of chocolate sauce.
