Indulgent mini muffins with gooey caramel and chocolate bites, featuring a hidden dark chocolate center.
Ingredients:
  • 349.50 gm self-raising flour
  • 90.00 gm (firmly packed) brown sugar
  • 62.70 gm chocolate bits
  • 82.50 ml caramel bits
  • 2 eggs
  • 1 pkt Tim Tam Chocolicious Bites Dark
  • 300ml pouring cream
  • 1 pkt Tim Tam Chocolicious Bites Gooey Caramel
Instructions:
  • Preheat your oven to 180C/160C fan forced. Place paper cases in twenty-two mini muffin pans each with 40ml capacity.
  • In a large bowl, mix together the flour and sugar. Add the caramel bits and chocolate bits. Create a well in the center of the mixture. In a separate container, whisk together the eggs and cream. Pour the egg mixture into the well, and gently stir until just combined.
  • Divide one-third of the batter evenly among the paper cases. Add the dark bites on top and cover with the remaining batter. Bake for 15 minutes or until golden. Let it cool in the pan for 5 minutes. While still warm, gently press a caramel bite into the top of each muffin, allowing it to melt slightly. Serve warm or at room temperature.
