Elevate your spring cocktail with a floral violet gin fizz featuring crème de violette and lavender bitters.
Ingredients:
  • Ice
  • 1 1/2 ounces gin
  • 1 pasteurized egg white or 2 tablespoons aquafaba (liquid from canned chickpeas)
  • 3/4 ounce lemon juice
  • 3/4 ounce simple syrup
  • 1/2 ounce crème de violette
  • 2 dashes of lavender bitters (optional)
  • 1 1/2 ounces club soda, chilled
  • Lemon wheel, for garnish
Instructions:
  • Fill a cocktail shaker halfway with ice. Pour in gin, egg white, lemon juice, simple syrup, crème de violette, and bitters. Shake vigorously for about 30 seconds until the shaker is frosted.
  • Pour the mixture from the shaker into a measuring cup to remove the ice. Return it back to the shaker, cover, and vigorously shake for about 45 seconds until emulsified.
  • Fill a glass with club soda. Pour the cocktail into the glass slowly, allowing the foam to rise. Garnish with a lemon wheel.
