Vodka-cured salmon salad with sweet mustard dressing

Marinate salmon in vodka overnight for a gourmet salad. Prep ahead for best flavors.
Ingredients:
  • 20.00 gm caster sugar
  • 9.60 gm sea salt flakes
  • 40.00 ml chopped fresh dill
  • 170g skinless salmon fillet, bones removed
  • 60ml (1/4 cup) vodka
  • 23.40 gm Dijon mustard
  • 21.00 gm fresh lemon juice
  • 14.40 gm honey
  • 2 tsp chopped fresh dill, extra
  • 1/2 avocado, stone removed, peeled, sliced
  • 1/2 Lebanese cucumber, peeled lengthways into ribbons
  • 30g baby mesclun salad leaves
  • French bread stick (baguette), sliced, toasted, to serve
Instructions:
  • Mix sugar, salt, and dill in a tight container. Add salmon and coat. Pour in vodka. Refrigerate for 24 hours, turning once. Drain, pat dry to remove excess mixture.
  • Mix tangy mustard, zesty lemon juice, sweet honey, and extra dill in a bowl.
  • Slice the salmon thinly, then arrange it, along with the avocado, cucumber, and salad leaves, on serving plates. Drizzle the dressing on top and serve with bread.
