Vodka-cured salmon with watercress pancakes

Impress guests with a gourmet salmon and vodka seafood dish prepared ahead of time.
Ingredients:
  • 200g skinless salmon fillet, pin-boned
  • 10.00 gm caster sugar
  • 40.00 ml chopped dill, plus sprigs to serve
  • 60ml vodka
  • 1 small beetroot, cooked, peeled (to give about 80g beetroot)
  • 30ml vodka
  • 120g creme fraiche
  • 21.00 gm lemon juice
  • 110g plain flour
  • 1.25 gm bicarbonate of soda
  • 2.50 gm cream of tartar
  • 500.00 ml picked watercress leaves (you need about 1/2 a bunch)
  • 150ml milk
  • Softened unsalted butter, to grease
Instructions:
  • 1. Rinse the salmon under cold water and pat dry with paper towels. 2. Mix sugar, dill, and 1 tablespoon of sea salt in a dish. Coat the salmon with this mixture. 3. Pour the vodka over the salmon, cover with plastic wrap, and refrigerate for 4 hours, turning it twice. 4. Grate beetroot into the dish and coat the salmon with the beetroot. 5. Chill for an additional 6 hours, turning the salmon occasionally.
  • Pat dry the salmon with paper towel to remove any excess moisture, then dice into 1cm cubes. Refrigerate the salmon cubes until it's time to serve.
  • Mix all creme fraiche ingredients in a bowl, then chill until serving.
  • Preheat the oven to 150°C and combine flour, bicarbonate of soda, cream of tartar, egg, and watercress in a food processor. Slowly process while adding the milk until a smooth batter forms.
  • In batches, lightly grease a non-stick frypan with butter over medium-high heat. Drop 2 teaspoons of batter for each pancake, spacing them 2-3cm apart. Cook until bubbles form on the surface (1-2 minutes), flip, and cook until golden (about 1 minute). Keep warm in the oven on a baking tray covered loosely with foil. Repeat with remaining batter, greasing the pan as needed.
  • In a serving bowl, arrange the salmon and dill sprigs. Present with the pancakes and vodka creme fraiche for guests to enjoy. Serve with chilled vodka on the side, if preferred.
