Volcano cob loaf recipe

Irresistibly cheesy cob loaf dip with cream cheese, cheddar, sour cream, and sweet chilli sauce - a crowd favorite!
Ingredients:
  • 1 large cob loaf
  • 60g butter
  • 4 rashers shortcut bacon, finely chopped
  • 4 green shallots, thinly sliced, plus extra to serve
  • 40g (1/4 cup) plain flour
  • 500ml (2 cups) milk
  • 250g cream cheese, chopped
  • 80g (1 cup) grated cheddar cheese
  • 125g (1/2 cup) sour cream
  • 44.00 gm sweet chilli sauce
Instructions:
  • Preheat your oven to 180C/160C fan forced. Slice off the top of the cob loaf using a serrated knife. Gently tear out the bread from the inside, leaving a 2cm-thick shell. Cut the bread filling into roughly 3cm pieces and slice the lid into 12 wedges.
  • Place the cob on one oven tray and the wedges -cut side up- and bread pieces on another. Drizzle them all with oil. Bake for 10 minutes or until perfectly crisp. Set aside.
  • In a large saucepan over medium heat, melt 20g of butter until it turns foamy. Add the bacon and cook for about 5 minutes, stirring occasionally until it's lightly golden. Then, transfer the bacon to a plate using a slotted spoon and set it aside.
  • Add the rest of the butter to the pan and heat until it turns foamy. Cook the shallot while stirring for about 2 minutes until soft. Sprinkle in the flour and cook, stirring, until the mixture bubbles, about 1 minute. Take the pan off the heat. Slowly pour in the milk while stirring continuously until smooth. Place the pan back on the heat and cook while stirring for 2 minutes until the sauce thickens. Mix in the cream cheese and half of the tasty cheese until melted. Finally, fold in most of the bacon, saving around 2 tablespoons for later.
  • Fill the cob loaf with the cheese mixture. Arrange the bread wedges upright in the mixture, leaning on each other. Top with the remaining cheese and bake for 10 minutes until melted.
  • Spread the sour cream on top of the cob, then drizzle with the sweet chilli sauce and sprinkle with the rest of the bacon. Enjoy warm with bread croutons for dipping.
