Wagon wheel parfait

Elevated wagon wheel parfait with marshmallows, custard, and fresh raspberries.
Ingredients:
  • 2 x 190g pkts Arnott’s Mini Wagon Wheels
  • 25g (1/3 cup) shredded coconut
  • 30g butter, melted
  • 115g (1/3 cup) raspberry jam, plus 2 tbs, extra
  • 800g (2 2/3 cups) double thick French vanilla custard
  • 400g (1 1/3 cups) double thick rich chocolate custard
  • 30 white marshmallows
  • 125.00 ml fresh raspberries
  • Choc fudge topping, to serve
Instructions:
  • In a food processor, combine 4 wagon wheels and 2 tablespoons of coconut until finely ground. Blend in butter until mixed. Divide mixture into four 375ml glasses. Layer with half of the jam, followed by 1/3 cup of vanilla custard in each glass. Sprinkle remaining coconut on top, add the rest of the jam, then layer with 1/3 cup of chocolate custard and another 1/3 cup of vanilla custard in each glass.
  • In a microwave-safe bowl, heat marshmallows on High for 30 seconds or until melted. Quickly spoon into parfaits and top each with half and a whole wagon wheel.
  • Mash raspberries and extra raspberry jam with a fork in a bowl. Spoon over the parfaits and drizzle with chocolate fudge topping.
