Walnut-Crusted Salmon

30 minute dinner: Baked honey-mustard fish with nutty herb crust - delicious perfection!
Ingredients:
  • 2 slices firm whole wheat bread
  • 3 tablespoons finely chopped walnuts (about 1 oz)
  • 2 teaspoons olive or canola oil
  • 1/2 teaspoon dried thyme leaves
  • 4 teaspoons Dijon mustard
  • 4 teaspoons honey
  • 1 1/4 lb salmon fillets, cut into 4 serving pieces
Instructions:
  • Preheat oven to 400°F and grease a cookie sheet. Grate bread using the large side of a box grater, then combine with walnuts, oil, and thyme in a small bowl.
  • Combine mustard and honey in a separate bowl; generously coat the tops of the salmon pieces. Sprinkle the breadcrumb mixture over the salmon, gently pressing to ensure they stick. Transfer the salmon pieces to a baking sheet.
  • Bake until salmon flakes easily with fork and topping is lightly browned, about 12-14 minutes.
