Enhance flavors with a charred touch!
Ingredients:
  • 1 large red onion, cut into thick wedges
  • 1 large red capsicum, thickly sliced
  • 1 large zucchini, sliced diagonally
  • 3 medium roma tomatoes, quartered
  • 125.00 ml fresh basil leaves, torn
  • 20.00 ml balsamic vinegar
Instructions:
  • Preheat a chargrill over medium-high heat. Mix onion, capsicum, zucchini, and oil in a bowl, ensuring everything is well coated.
  • Sear onion mixture in batches until charred and tender, about 5 to 6 minutes. Transfer to a bowl.
  • Sear tomatoes for 2 minutes on each side until lightly charred and tender. Mix them with the onions, then add basil and vinegar. Combine everything well before seasoning with salt and pepper. Serve and enjoy!
