Warm beetroot, bean & walnut salad

Crunchy and nutritious salad for a satisfying meal.
Ingredients:
  • 300g French beans, ends trimmed
  • 3 large beetroot, cooked, peeled, sliced into 1cm-thick rounds
  • 60ml olive oil
  • 36.80 gm walnut oil*
  • 40.00 ml balsamic vinegar
  • 57.50 gm walnut pieces, lightly toasted
Instructions:
  • Briefly blanch the beans in boiling salted water for 1 minute, then drain and refresh. Mix with beetroot and place on plates with fish. Combine oils, vinegar, salt, and pepper. Drizzle over salad and top with toasted walnuts.
