Elevate baked Brussels sprouts with zesty garlic-vinegar dressing and fresh cilantro!
Ingredients:
  • 2 lb Brussels sprouts, trimmed, quartered
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 2 tablespoons sesame oil
  • 1 shallot, finely chopped
  • 2 cloves garlic, finely chopped
  • 1/4 cup seasoned rice vinegar
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons sliced green onions (2 medium)
Instructions:
  • Preheat oven to 450°F and generously spray a 15x10x1-inch pan with cooking spray.
  • Combine Brussels sprouts, 2 tablespoons of olive oil, and 1/2 teaspoon of salt in a large bowl, ensuring even coating. Arrange in a single layer on a pan and bake for 10 to 15 minutes until sprouts are tender and lightly browned. Let cool for 5 minutes before serving.
  • In a small bowl, whisk together sesame oil, 1/2 teaspoon salt, pepper, shallot, garlic, vinegar, and 2 tablespoons olive oil until well blended.
  • Place the Brussels sprouts in a serving dish and generously drizzle with the dressing. Top with fresh cilantro and onions before serving the dish warm.
