Indulge in a flavorful chicken, peanut, and cabbage salad for a quick and satisfying post-work meal.
Ingredients:
  • 400g chicken tenderloins
  • 42.00 gm soy sauce
  • 45.50 gm peanut oil
  • 300g snow peas, trimmed
  • 70g roasted unsalted peanuts
  • 450g Chinese cabbage, coarsely shredded
  • 4 green onions, thinly sliced
  • 40.00 ml rice vinegar
  • 15.00 gm caster sugar
  • 1 red birdseye chilli, seeded, finely chopped
Instructions:
  • Slice chicken tenderloins in half lengthwise and place them in a bowl. Mix them with 1 tablespoon of soy sauce. Heat a wok over high heat, add 1 teaspoon of oil, and stir-fry the chicken in two batches for 1-2 minutes until golden and cooked. Set the chicken aside. In the same wok, add another teaspoon of oil, then stir-fry snow peas, peanuts, cabbage, and half of the onions for 2 minutes until snow peas are vibrant green and tender. Combine with the chicken in the bowl.
  • In a small bowl, combine vinegar, sugar, chili, and the rest of the oil and soy sauce. Season with salt to taste.
  • Combine the rest of the green onions with the chicken mixture. Drizzle with dressing and toss gently. Divide into shallow bowls and serve.
