Ingredients:
  • Melted butter, for greasing
  • 300g goat's cheese
  • 3 eggs, separated
  • 185mls (3/4 cup) thin cream
  • 1/4 bunch fresh chives, finely chopped
  • Salt & ground black pepper, to taste
  • Mixed green salad leaves, to serve
  • Olive oil, to serve
  • Balsamic vinegar, to serve
Instructions:
  • Preheat your oven to 180°C. Lightly grease six 125mls (1/2-cup) ramekins by brushing them with melted butter.
  • Combine goat's cheese, egg yolks, and thin cream in a bowl and beat with electric beaters until smooth.
  • In a separate mixing bowl, whip the egg whites with clean electric beaters until soft peaks form. Gently fold the whipped egg whites and chives into the cheese mixture using a metal spoon until well combined. Season with salt and pepper to taste.
  • Transfer the mixture into the greased ramekins, ensuring the tops are smooth. Set the ramekins in a baking dish and fill with hot water halfway up the sides. Bake in the preheated oven until golden and set, about 20 minutes. Allow to cool for 10-15 minutes before serving.
  • Enjoy the warm goat's cheese pots alongside a bed of fresh green salad leaves drizzled with a light dressing of olive oil and balsamic vinegar.
