Vibrant basil pesto, sun-dried tomatoes, and creamy goat cheese create a delicious and simple vegetarian sandwich. Pair with sweet seedless purple grapes for a perfect combination.
Ingredients:
  • 1 (5 ounce) goat cheese, softened
  • 0.5 cup basil pesto
  • 0.75 cup sun-dried tomatoes, softened and chopped
  • 2 pita breads, cut in half
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C).
  • Gently unfold the pita bread to create pockets. Spread creamy goat cheese inside each pocket. Add a generous layer of flavorful pesto on top. Sprinkle with sun-dried tomatoes and place on a baking sheet.
  • Bake in the preheated oven for 3 to 5 minutes until the filling is heated through and the bread is golden brown.
