Warm lamb pasta salad

Spiced lamb salad with vibrant greens.
Ingredients:
  • 300g dried spiral pasta
  • 75.08 gm olive oil
  • 600g lamb fillets, trimmed
  • 250.00 ml chopped fresh flat-leaf parsley leaves
  • 62.50 ml chopped fresh mint
  • 125.00 ml chopped fresh basil
  • 20.00 ml capers, drained, rinsed
  • 65.63 gm lemon juice
  • 1 red capsicum, thinly sliced
Instructions:
  • Boil pasta in a large pot of salted water according to package instructions until al dente. Then, drain the pasta.
  • In a large non-stick frying pan over medium heat, warm 1 tablespoon of oil. Cook the lamb for 3 minutes on each side for medium doneness, or until it reaches your preferred level of doneness. Transfer the lamb to a plate, cover with foil, and let it rest for 5 minutes before thinly slicing.
  • In a bowl, mix parsley, mint, basil, mustard, capers, lemon juice, and the rest of the oil. Add pasta, lamb, and capsicum, then season with salt and pepper. Gently toss to combine and serve.
