Nourishing and flavorful salad perfection.
Ingredients:
  • 250g dried wholemeal spiral pasta
  • 125.00 ml frozen peas
  • 250g lamb backstrap
  • 310g can corn kernels, drained
  • 2 celery stalks, thinly sliced
  • 1/2 small red onion, chopped
  • 40.00 ml chopped fresh chives
  • 42.00 gm lemon juice
  • 9.20 gm olive oil
  • 17.70 gm wholegrain mustard
Instructions:
  • Boil pasta in a large pot of salted water as per package instructions until al dente, adding peas during the last 4 minutes of cooking. Drain well.
  • Heat a non-stick frying pan over medium-high heat. Sear lamb for 3 minutes on each side (for medium) or until desired doneness. Transfer to a plate, cover with foil, and let rest for 5 minutes before thinly slicing.
  • In a bowl, mix together pasta, corn, celery, onion, and chives. In a separate container, whisk together lemon juice, oil, and mustard. Pour the dressing over the pasta mixture along with the lamb. Toss everything together well and serve.
