Warm salad of brie and roast cherry tomatoes

Creamy brie enhances warm salads.
Ingredients:
  • 500g vine-ripened cherry tomatoes
  • 200g mixed salad leaves
  • 240g olive
  • 1 red onion, thinly sliced
  • 60ml olive oil
  • 40.00 ml red wine vinegar
  • 23.40 gm Dijon mustard
  • 20.00 ml finely chopped basil
  • 2 tsp finely chopped chives
  • 20.00 ml finely chopped flat-leaf parsley, plus extra leaves to serve
  • 8 baguette slices, chargrilled, kept warm
  • 400g brie (at room temperature), cut into 8 thick slices
Instructions:
  • Preheat your oven to 180°C, then roast the tomatoes until they begin to split, about 5-10 minutes.
  • Combine the salad leaves, olives, and onion in a bowl. Whisk together the oil, vinegar, and mustard until well mixed, then fold in the herbs and season with salt and pepper. Toss the dressing with the salad, tomatoes, and parsley leaves. Serve alongside a baguette and brie.
