Warm salad of scallops and walnuts

Whip up this elegant scallop dish in just 10 minutes.
Ingredients:
  • 5 slices white bread
  • 125ml croutons
  • 24 scallops, roe removed
  • 18.40 gm walnut oil*
  • 40.00 ml sherry vinegar*
  • 100g baby salad leaves (mesclun)
  • 1 radicchio, outer leaves discarded
  • 115.00 gm walnuts, toasted, chopped
Instructions:
  • Cube the bread into small pieces. Sauté in olive oil over medium heat, flipping occasionally, until golden brown, about 3-4 minutes.
  • Place on paper towel to let any excess liquid drain.
  • After gently drying the scallops with paper towel, elevate their natural flavors by seasoning them generously with salt and pepper.
  • Combine a luxurious blend of 1/3 cup (80ml) olive oil, walnut oil, and sherry vinegar, then season to perfection for the dressing.
  • Combine the salad leaves, radicchio, walnuts, and croutons in a bowl.
  • In a sizzling hot frypan with remaining oil, sear the scallops in batches for 30 seconds on each side until they turn golden on the outside but remain slightly opaque in the center.
  • Combine the salad with the dressing, then transfer to serving plates. Top each with 4 scallops and serve promptly.
