Ingredients:
  • 60mls (1/4 cup) olive oil
  • 42.00 gm fresh lemon juice
  • 1/2 tsp cracked black pepper
  • 350g firm tofu, cut into lcm-thick slices, halved
  • 500g tomato
  • 20.00 ml capers, rinsed, drained
  • 160g olive
  • 62.50 ml chopped fresh Continental parsley
  • 1 small red onion, thinly sliced
  • 150g baby spinach leaves, washed, drained
Instructions:
  • In a large bowl, mix together the olive oil, lemon juice, and garlic. Add cracked black pepper and tofu, cover, and let marinate at room temperature for approximately 30 minutes.
  • Heat the chargrill on medium-high. Drain the tofu, keeping the marinade for later.
  • Grill half of the tofu, brushing it with marinade, for 1 minute on each side. Transfer to a large bowl. Repeat with the remaining tofu.
  • Place the halved tomatoes, cut-side down, on the chargrill over medium-high heat for 1 minute until warm. Combine them with capers, olives, parsley, onion, and spinach in the bowl with the tofu, gently tossing with the remaining marinade.
