Quick, healthy and flavorful broth to warm you on a chilly day.
Ingredients:
  • 750 ml organic chicken or vegetable stock
  • 3cm piece of ginger
  • 1 fresh red chilli
  • ½ savoy cabbage
  • 2 tablespoons miso paste
  • low-salt soy sauce
  • 100 g silken tofu
Instructions:
  • In a pan, bring the stock to a boil. Julienne the ginger, slice the garlic, and chop the chili. Add them to the stock and simmer covered for 5 minutes. Shred the cabbage, julienne the carrot, add to the pan, and simmer covered for another 3 to 4 minutes until the cabbage wilts. Stir in miso paste and soy sauce to taste. Add tofu and let it sit before serving.
