Savory Japanese soup with Shiitake mushrooms and tofu.
Ingredients:
  • 4 cups vegetable broth
  • 4 shiitake mushrooms, thinly sliced
  • 0.25 cup miso paste
  • 4 teaspoons soy sauce
  • 0.33333334326744 cup diced firm tofu
  • 2 green onions, trimmed and thinly sliced
Instructions:
  • In a saucepan, bring the vegetable broth to a boil. Add the mushrooms and simmer over low heat for 4 minutes. Mix miso paste and soy sauce in a small bowl, then add the mixture to the broth along with the tofu and cook for 1 more minute. Serve the soup in bowls and garnish with green onions.
