"Delicious umami-packed miso soup with sauteed shiitakes, garlic, chives, chicken, and beef broth, ready in 30 minutes!"
Ingredients:
  • 1 tablespoon canola oil, or more as needed
  • 4 large shiitake mushrooms, stemmed and thinly sliced
  • 1 bunch fresh chives, chopped
  • 1 clove garlic, peeled and sliced
  • 0.5 (14 ounce) package firm tofu, cubed
  • 1 (14 ounce) can low-sodium beef broth
  • 1 (14 ounce) can low-sodium chicken broth
  • 2.5 tablespoons white miso paste
Instructions:
  • In a medium saucepan, heat oil over medium-high heat. Sauté mushrooms, chives, and garlic for 1 minute. Add tofu and cook for an additional 2 minutes. Stir in beef broth, chicken broth, and dissolve miso paste.
  • Bring the mixture to a gentle boil, then lower the heat and let it simmer for 10 minutes. Serve the dish by ladling it into bowls.
