Watercress, orange & red kidney bean salad

Vibrant Mexican salad bursting with zesty flavors and a hint of pepper.
Ingredients:
  • 60ml (1/4 cup) extra virgin olive oil
  • 30.00 ml red wine vinegar
  • 3 oranges, peeled, thinly sliced
  • 60g baby spinach leaves
  • 500.00 ml watercress sprigs
  • 1/2 small red onion, thinly sliced
  • 400g can red kidney beans, rinsed, drained
  • 120g feta, coarsely chopped
Instructions:
  • In a jug, mix the oil and vinegar, then season generously with salt and pepper.
  • Arrange the orange slices, spinach, watercress, onion, beans, and feta beautifully on a platter, then drizzle the dressing on top.
