Watercress pesto adds a peppery kick to pasta for a healthy boost.
Ingredients:
  • 55g (1/2 cup) walnut kernels
  • 1 bunch watercress sprigs, thick stems discarded
  • 1-2 garlic cloves, coarsely chopped
  • 125ml (1/2 cup) extra virgin olive oil
  • 40g (1/2 cup) shredded parmesan
Instructions:
  • Toast the walnuts in a skillet over medium heat for 3-4 minutes until fragrant and lightly golden. Allow to cool before using.
  • In a food processor, pulse walnuts, watercress, and garlic until finely chopped. Add oil and blend until smooth. Season with salt and pepper, then mix in the Parmesan.
