Watercress Soup

Whip up a delicious watercress soup with fresh watercress, white wine, and potatoes for a simple yet flavorful meal.
Ingredients:
  • 3 tablespoons butter
  • 2 cups white or yellow onion, chopped
  • Salt
  • 1 cup white wine, chicken stock, or vegetable stock (wine or veg stock for vegetarian version)
  • 1 pound potatoes, peeled and cut into chunks
  • 6 cups water
  • 6 cups fresh watercress, about 1/2 pound, chopped, stems included
  • 1/2 teaspoon black pepper
  • About 6 tablespoons sour cream, stirred in, or for garnish
Instructions:
  • In a large pot, melt the butter until frothy, then add the onions. Cook over medium heat until soft and translucent, about 5 minutes, seasoning with salt as they cook.
  • Simmer potatoes in wine (or stock): Combine wine (or stock), potatoes, and water in a pot. Bring to a boil, then reduce heat to low, cover, and simmer for about 30 minutes until potatoes are soft.
  • Add the vibrant watercress to the pot, stirring well. Allow it to cook for an additional 2 minutes.
  • Blend the soup until smooth using an immersion blender. If you don't have one, carefully blend the soup in batches in a regular blender and transfer back to the pot. Exercise caution when blending hot liquids by filling the blender up to one-third, and remember to secure the lid.
  • Before serving, season and garnish the soup: Sprinkle salt to taste followed by a generous amount of black pepper. Either stir the sour cream into the entire pot of soup or ladle a tablespoon into the center of each bowl before serving.
