Watercress soup

Cozy up with flavorful watercress soup in the cold weather.
Ingredients:
  • 100g unsalted butter
  • 1 onion, sliced
  • 1 leek, sliced
  • 500g potatoes (such as pontiac or desiree), peeled, chopped
  • 350g watercress*, leaves picked
  • 1L (4 cups) chicken style liquid stock (see Note)
  • 300ml buttermilk
Instructions:
  • In a large saucepan, melt the butter over low heat. Add the onion and leek, cooking for 2-3 minutes until softened. Stir in the potato, half of the watercress, and the stock. Bring to a boil, then simmer on low for about 20 minutes until the potato is soft. Cool slightly, then mix in the buttermilk and remaining watercress. Blend until smooth, season with salt and pepper. Reheat gently to serve with a drizzle of buttermilk, or chill and garnish with ice cubes.
