Watermelon and rosewater iced tea

Spoil Mom with a refreshing and delicious fruity iced tea for Mother's Day.
Ingredients:
  • 750.00 gm boiling water
  • 2 lady grey tea bags
  • 2.5kg watermelon, peeled, roughly chopped
  • 2 tsp rosewater essence
  • 500.00 ml chilled mineral water
  • Fresh mint sprigs, to serve
  • Ice-cubes, to serve
Instructions:
  • In a large heatproof jug, combine boiling water and tea bags. Let sit for 5 minutes to steep. Remove and discard the tea bags, then cool the tea for 20 minutes.
  • Blend watermelon until smooth in a blender. Strain the mixture into tea, discarding solids. Stir in rosewater and refrigerate until cold, about 2 hours.
  • Gently mix in sparkling mineral water. Garnish with fresh mint sprigs and ice cubes as desired.
