Watermelon ice with malibu & coconut milk

Creamy cocktail with a boozy kick. Cheers!
Ingredients:
  • 3kg piece watermelon, peeled, roughly chopped
  • 185ml (3/4 cup) water
  • 115g (1/2 cup) caster sugar
  • 42.00 gm fresh lemon juice
  • 480ml coconut milk
  • 240ml Malibu liqueur
Instructions:
  • Puree half of the watermelon in a food processor until smooth. Strain the puree through a sieve into a large bowl, pressing with a wooden spoon to extract the liquid. Discard the pulp and seeds. Repeat with the other half of the watermelon.
  • In a medium saucepan, combine water, sugar, and lemon juice. Bring to a boil over medium heat while stirring. Reduce heat to low and simmer for 1 minute, stirring continuously. Let it cool for 5 minutes before using.
  • Combine the sugar mixture with the watermelon juice, stirring until fully mixed. Divide the mixture into two 2-liter (8-cup) freezerproof containers. Freeze for 6 hours or until firm.
  • Scrape the ice with a sturdy fork to create large coarse crystals.
  • In a large jug, mix together the coconut milk and Malibu until fully combined.
  • Layer the refreshing watermelon ice and creamy coconut milk mixture in 12 charming 250ml (1-cup) glasses. Enjoy promptly!
