Watermelon ice with malibu & coconut milk

Decadent, creamy cocktail with a boozy twist. Cheers!
Ingredients:
  • 3kg piece watermelon, peeled, roughly chopped
  • 185ml (3/4 cup) water
  • 115g (1/2 cup) caster sugar
  • 42.00 gm fresh lemon juice
  • 480ml coconut milk
  • 240ml Malibu liqueur
Instructions:
  • Blend half of the watermelon in a food processor until smooth. Strain the mixture through a sieve into a large bowl, pressing with a wooden spoon to extract all the liquid, then discard the pulp and seeds. Repeat with the remaining watermelon.
  • In a medium saucepan, combine water, sugar, and lemon juice. Bring to a boil over medium heat, stirring constantly. Lower the heat and simmer for 1 minute, continuing to stir. Allow it to cool slightly for 5 minutes before using. (See microwave tip.)
  • Combine the sugar mixture with the watermelon juice and stir until fully mixed. Divide the mixture into two 2-liter (8-cup) freezerproof containers. Freeze for 6 hours or until firm.
  • Scrape the ice with a sturdy fork to create large coarse crystals.
  • In a large jug, mix the coconut milk and Malibu until fully combined.
  • In twelve 250ml (1-cup) serving glasses, alternate layers of watermelon ice and coconut milk mixture. Serve right away.
