Succulent summer fruit platter, perfect for a refreshing appetizer.
Ingredients:
  • 1/4 red onion, thinly sliced
  • 10.60 gm lemon juice
  • 500g slice watermelon, cut into 8 even wedges
  • 80g feta, crumbled
  • 2 slices prosciutto, torn
  • 40.00 ml small fresh mint leaves
  • 3 tsp finely chopped pistachios
  • Extra virgin olive oil, to drizzle
Instructions:
  • Mix together the onion and lemon juice in a small bowl.
  • On a plate, layout the watermelon slices with a gap between each. Add the feta, prosciutto, and onion mix on top. Sprinkle with fresh mint and pistachios. Season with pepper and finish with a drizzle of extra virgin olive oil.
