Make refreshing watermelon popsicle mocktails for a delightful drink option anytime.
Ingredients:
  • 55g caster sugar
  • 2 mint sprigs
  • 1.5kg watermelon, peeled, coarsely chopped
  • 60g fresh or frozen raspberries
  • 1.5L chilled sparkling apple juice or lemonade
Instructions:
  • In a small saucepan over low heat, mix together sugar, fresh mint, and ½ cup (125ml) water. Stir and cook for 5 minutes until the sugar dissolves and the mixture thickens slightly. Let it cool briefly, then remove and discard the mint leaves.
  • Combine the syrup, watermelon, and raspberries in a food processor. Blend until smooth. Strain the mixture through a fine sieve into a large jug, pressing with a spoon to extract all the liquid.
  • Evenly distribute the mixture into twelve 1/3-cup (80ml) ice block molds. Insert ice block sticks and freeze for 6 hours or until solid.
  • Fill serving glasses with iceblocks. Top with refreshing apple juice or lemonade. Serve promptly for a delightful treat.
