Watermelon slushie martini recipe

Prepare watermelon slushie in advance, freeze for two weeks, ready for a refreshing summer party beverage.
Ingredients:
  • 70g (1 ⁄3 cup) caster sugar
  • 1kg piece watermelon, plus extra slices, cut into stars, to serve (see tip)
  • 160ml (2/3 cup) vodka
  • 42.00 gm fresh lime juice
  • Lime wedges, to serve
  • Fresh mint leaves, to serve
Instructions:
  • In a small saucepan, mix the sugar with 80ml (1/3 cup) water. Stir over low heat until the sugar dissolves. Let it come to a simmer, then transfer the mixture to a heatproof jug and chill in the fridge for 1 hour.
  • Remove the watermelon rind and dice the flesh. Blend the flesh in a food processor until smooth, then strain through a sieve into a large jug. Mix the watermelon juice with the sugar syrup in a freezerproof dish. Freeze for 3-4 hours until partially set. Use a fork to break it up, stir, and freeze overnight.
  • Skewer additional watermelon stars onto 4 bamboo skewers. Break up the frozen watermelon mixture with a fork and transfer it to a food processor. Add the vodka and lime juice. Process until smooth. Divide the mixture among serving glasses and garnish with lime wedges, mint, watermelon star skewers, and any other cocktail decorations you prefer.
