Watermelon slushie

Cool off with a refreshing watermelon slushie for your summer party.
Ingredients:
  • 3kg watermelon, rind removed, flesh coarsely chopped, plus watermelon slices, extra, to serve
  • 125g punnet fresh raspberries
  • 20.00 gm caster sugar
  • 1 tsp vanilla bean paste
  • Soda water, to serve
  • Persian fairy floss, to decorate (optional)
  • Edible flowers, to serve (optional)
Instructions:
  • In a blender, puree the watermelon until smooth. Strain the mixture through a sieve into a jug, pressing with a spoon to extract the liquid. Discard the solids. Chill 500ml (2 cups) of the watermelon juice in the fridge. Freeze the rest in a container or ice-cube trays for 4 hours. Clean the blender afterward.
  • Puree the raspberries, sugar, and vanilla bean paste in a blender until smooth. Strain the mixture through a sieve into a bowl, pressing with a spoon to extract all the liquid. Discard solids and rinse the blender.
  • Take the frozen watermelon juice out of the freezer and let it sit for 10 minutes to soften. Then chop it coarsely on a board and blend it in a blender with the chilled watermelon juice until smooth.
  • Cut star shapes from the leftover watermelon slices using a star-shaped cutter. Divide the raspberry puree among 4 large serving glasses. Top each with the watermelon mixture, soda water, and garnish with the watermelon stars, fairy floss, and edible flowers as desired.
