Watermelon vodka

Ingredients:
  • 1 small seedless watermelon
  • 750ml bottle chilled vodka
  • Soda water or lemonade, to serve
  • Lemon slices, to garnish
Instructions:
  • Peel and discard the watermelon rind. Blend the watermelon flesh in a food processor until smooth. Strain the puree to remove any solids. Mix in the vodka, then chill in the refrigerator for 2 hours.
  • Fill tall glasses 1/4 of the way with watermelon vodka, then fill the rest with soda water or lemonade. Add plenty of ice and garnish with lemon slices.
