Create a unique spice blend to elevate this dish to the next level.
Ingredients:
  • 62.50 ml pistachio kernels
  • 6.00 gm sesame seeds
  • 1/2 tsp finely grated orange rind
  • 10.00 gm raw caster sugar
  • 1kg wedge seedless watermelon, halved lengthways
Instructions:
  • 1. Heat a small frying pan over medium heat. Add pistachios and cook, stirring occasionally, for 4 minutes until lightly toasted. 2. Add sesame seeds and cook for an additional 1 minute until they are lightly toasted. 3. Transfer the mixture to a bowl and let it cool for 5 minutes.
  • Combine the pistachio mixture, orange rind, sugar, and cinnamon in a food processor. Pulse until finely chopped, then transfer the mixture to a shallow bowl.
  • Slice each watermelon wedge into 1cm thick pieces and enjoy with a side of dukkah.
