Greek salad with watermelon salsa

Greek flavors elevated with sweet watermelon.
Ingredients:
  • 1/4 small seedless watermelon
  • 1/2 red onion, thinly sliced
  • 125.00 ml pitted kalamata olives, sliced
  • 40.00 ml chopped flat-leaf parsley
  • 120ml olive oil
  • 42.00 gm lemon juice
  • 4 x 100g slices feta
  • Lemon wedges, to serve
  • Warm pita bread, to serve
Instructions:
  • Preheat the oven to 170°C for the perfect baking temperature.
  • Dice the watermelon into 0.5cm cubes and mix with red onion, olives, and parsley in a bowl. In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper until combined.
  • 1. Arrange feta slices on a greased baking tray and bake in the oven for about 5 minutes, or until warmed through. Place a warm feta slice on each plate, top with salsa, and drizzle with dressing right before serving. Optional: Serve with lemon wedges and warm pita bread.
