Watermelon-cranberry and pineapple-mint slushies

Beat the heat with refreshing slushies.
Ingredients:
  • 1/4 (about 600g) watermelon, rind removed, coarsely chopped
  • 500ml cranberry juice
  • 60ml lime juice
  • 40.00 gm caster sugar
  • 1050.00 gm (1 litre) pineapple juice
  • 125.00 ml shredded mint leaves
  • Mint sprigs, to serve
Instructions:
  • Blend the watermelon until smooth in a blender. Strain through a coarse sieve into a jug. Mix in cranberry juice, lime juice, and sugar until well combined.
  • Transfer the mixture into a shallow metal container, cover it with foil, and let it freeze in the freezer for at least 6 hours until completely frozen.
  • Adjust sweetness of pineapple juice with caster sugar. Transfer mixture to a shallow metal container, cover with foil, and freeze for 6 hours or until solidified.
  • Take out the watermelon and pineapple ices from the freezer. Break up the watermelon ice swiftly using a metal spoon. Put it in a food processor and blend until slushy. Transfer to a new bowl. Blend the pineapple ice next, and toss in the mint leaves. (Remember to clean the blender after blending the watermelon mixture.)
  • Scoop slushies into glasses. Garnish watermelon slushies with lime wedges and pineapple slushies with mint sprigs. Serve.
