Watermelon and cucumber salad with tangy vinegar-lime dressing, a perfect summer refreshment.
Ingredients:
  • 2 cucumbers
  • 4 cups cubed seeded watermelon
  • 0.5 cup finely chopped red onion
  • 3 tablespoons seasoned rice vinegar
  • 3 tablespoons white wine vinegar
  • 3 tablespoons lime juice
  • 0.25 cup chopped fresh mint
  • 0.5 cup feta cheese
Instructions:
  • Using a vegetable peeler, create a striped pattern lengthwise on the cucumbers. Cut the cucumbers in half lengthwise, then slice each half into 1/4-inch thick 'half-moon' shapes. Mix the cucumbers, watermelon, and red onion together in a large bowl.
  • In a bowl, combine rice vinegar, white wine vinegar, and lime juice. Add mint and gently muddle by stirring and pressing the leaves with a spoon until bruised. Remove and discard mint leaves once bruised.
  • Drizzle the dressing over the salad and toss gently, then sprinkle feta cheese over the top and gently toss again.
