Refreshing watermelon salad with cucumber, tomato, and onion - a sweet and tangy twist perfect for meal prep.
Ingredients:
  • 1 large cucumber, halved lengthwise and thinly sliced crosswise
  • 2 medium tomatoes, diced
  • 1 small onion, thinly sliced
  • 2 cups cubed seedless watermelon
  • 3 tablespoons red wine vinegar
  • 1 teaspoon sea salt
  • 1 teaspoon white sugar
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon dried basil
  • 0.5 teaspoon ground thyme
  • 0.5 teaspoon ground black pepper
Instructions:
  • Toss together cucumber, tomatoes, onion, and watermelon in a large bowl.
  • Combine vinegar, olive oil, salt, sugar, oregano, basil, thyme, and pepper in a small bowl. Drizzle the mixture over the salad and toss until well coated.
  • Chill in the fridge for 20 minutes before serving cold.
