Whipped fetta and broccolini pesto pasta

Whipped feta pesto pasta with vibrant broccolini - a weeknight favorite!
Ingredients:
  • 500g dried fusilli pasta
  • 2 bunches Perfection Fresh Broccolini, cut into thirds
  • 125.00 ml (firmly packed) basil leaves
  • 2 garlic cloves, quartered
  • 40g (1/2 cup) freshly grated parmesan cheese, plus extra to serve
  • 200g block Danish fetta, crumbled
  • 80ml (1/3 cup) thickened cream
Instructions:
  • Boil pasta until perfectly cooked, then drain and return to saucepan.
  • Place the broccolini in a heatproof bowl and cover it with boiling water. Let it stand for 5 minutes. Reserve 1/2 cup of the broccolini water, then drain the broccolini.
  • Combine half of the broccolini, basil, garlic, parmesan, fetta, and cream in a food processor. Blend until smooth, then gradually add broccolini water until a thick sauce forms.
  • Combine the feta mixture with the pasta in the pan. Season and mix well. Serve the pasta topped with the remaining broccolini and extra parmesan.
