Indulgent dessert with layers of sweet ricotta, amaretti cookies, and fresh berries for an elegant presentation.
Ingredients:
  • 1 (8 ounce) container fresh ricotta cheese, well drained
  • 1 cup heavy cream
  • 0.75 cup powdered sugar
  • 2 tablespoons light flavored honey
  • 1 tablespoon lemon zest
  • 20 amaretti cookies
  • 20 fresh blackberries
  • 5 fresh raspberries
  • 5 leaves fresh mint
  • 0.25 teaspoon ground nutmeg
Instructions:
  • Combine drained ricotta, cream, powdered sugar, and honey in a stand mixer and beat on low speed until creamy, about 1 minute. Increase speed to high and whip until fluffy, 2 to 3 minutes. Gently fold in lemon zest. Transfer the fluffy mixture to a piping bag and chill in the refrigerator as you get the serving glasses ready.
  • Take cookies and put them in a resealable plastic bag; seal the bag and crush the cookies into chunky crumbs. Reserve 1 tablespoon for garnish. Distribute the rest of the crumbs equally into five 6-ounce glasses.
  • Fill each glass with the ricotta cream, then sprinkle the reserved crumbs on top. Garnish with blackberries, raspberries, mint, and nutmeg. Chill in the fridge for 1 hour before serving.
