Whipped ricotta truffles with vanilla protein powder and peanuts: a satisfying treat for breakfast or anytime snack.
Ingredients:
  • 0.5 cup whole-milk ricotta cheese
  • 0.5 cup roasted honey peanut butter (such as Skippy®)
  • 2 tablespoons sugar-free peanut butter-flavored syrup (such as Torani®)
  • 1 teaspoon vanilla extract
  • 2 scoops vanilla protein powder
  • 2 packets stevia-erythritol sweetener (such as Truvia®)
  • 1 pinch salt
  • 0.33333334326744 cup chopped dry roasted peanuts
Instructions:
  • In a bowl, whisk together ricotta cheese, peanut butter, peanut butter syrup, and vanilla extract using a hand mixer until fully blended. Fold in protein powder, sweetener, and salt until the mixture is smooth.
  • Shape mixture into delectable 1-inch balls and cloak in chopped peanuts. Chill until serving time.
