White bean, chorizo and herb salad

Spice up your white bean salad with flavorful Spanish chorizo.
Ingredients:
  • 20.00 ml red wine vinegar
  • 1 garlic clove, finely chopped
  • 5.90 gm Dijon mustard
  • Pinch of caster sugar
  • 60ml olive oil
  • 150g fresh chorizo, cut into 1cm-thick slices
  • 2 x 400g cans cannellini beans, rinsed, drained
  • 125g cherry tomatoes, quartered
  • 2 handfuls of baby salad leaves or mixed herbs (such as chervil, parsley and rocket)
Instructions:
  • Combine vinegar, garlic, mustard, and sugar in a bowl, then add sea salt and freshly ground pepper for seasoning. Slowly whisk in oil until thickened.
  • Cook the chorizo in a hot frypan until fully cooked and the fat is rendered. Place on paper towel to drain. Mix beans with half of the dressing in the pan, gently heat, and transfer to a bowl.
  • Combine the tomatoes, herbs, and chorizo with the beans, gently toss, and serve with the remaining dressing.
