White chocolate and almond macarons

Ingredients:
  • 300g icing sugar
  • 300g almond meal
  • 5 eggwhites (from 59g eggs)
  • A pinch of cream of tartar
  • 70g caster sugar
  • 1-2 drops liquid food colouring, (green and pink)
  • 180g good-quality white chocolate, finely chopped
  • 80ml thickened cream
  • 20g butter, chopped
Instructions:
  • Sift the icing sugar and almond meal into a large bowl using a fine sieve to create a smooth mixture.
  • With an electric mixer, whip egg whites and cream of tartar in a clean, dry bowl until stiff peaks form. Slowly add caster sugar one tablespoon at a time, while whisking continuously, until the mixture is thick and shiny.
  • Combine the eggwhite mixture with the almond-meal mixture. Divide the mixture into 2 equal portions. Mix green coloring into one portion and pink coloring into the other.
  • Prepare 4 oven trays by lining them with baking paper. Fill a large piping bag, equipped with a 5mm round nozzle, with the green mixture. Pipe 4cm discs onto the lined trays, leaving space for them to spread. Repeat the process with the pink mixture. Gently smooth the top of each macaron with a slightly wet finger. Let them rest on the trays for 30 minutes to develop a crust.
  • Preheat your oven to 150°C. Bake half of the macarons on separate trays, switching their positions halfway through, for 20 minutes or until they are dry to the touch. Allow them to cool completely on the trays. Repeat this process with the remaining macarons.
  • To prepare the ganache, simply place the chocolate in a large heatproof bowl. In a small saucepan over high heat, bring the cream and butter to a boil. Remove from heat and promptly pour over the chocolate. Stir with a metal spoon until smooth. Chill in the fridge for 20 minutes until nearly firm.
  • Spread a luscious layer of ganache on one macaron base and top it with another, creating a delightful sandwich. Repeat with the rest of the macarons and the heavenly white chocolate ganache. Enjoy immediately or store in an airtight container for up to 3 days.
