Indulgent white chocolate and raspberry pair perfectly in these decadent puddings.
Ingredients:
  • 250.00 ml plain flour
  • 8.00 gm baking powder
  • 215.00 gm caster sugar
  • 80g white chocolate, finely chopped
  • 4.40 gm vanilla extract
  • 128.75 gm milk
  • 1 egg
  • 60g butter, melted, cooled
  • 250.00 ml frozen raspberries
  • pure icing sugar, to serve
  • 5.00 gm cornflour
  • 321.88 gm milk
  • 100g white chocolate, finely chopped
Instructions:
  • Preheat your oven to 180°C. Grease a 5-cup, 6cm-deep, 20cm (base) ovenproof dish and place it on a baking tray lined with baking paper.
  • Sift flour and baking powder into a large bowl, followed by adding sugar and chocolate. Whisk vanilla, milk, egg, and butter together in a jug. Combine this mixture with the flour. Gently stir to mix, then fold in raspberries. Spoon the batter into the prepared dish and smooth the surface.
  • Prepare the sauce by mixing sugar and cornflour in a bowl then dust over the puddings. Warm milk and chocolate together in a small saucepan over medium heat until hot. Drizzle the mixture over the back of a large metal spoon onto the pudding.
  • Bake for 45 to 50 minutes until a skewer inserted halfway into pudding comes out clean. Dust with icing sugar and serve immediately.
