Indulgent white chocolate cake with raspberry filling, perfect for special occasions.
Ingredients:
  • 0.25 cup milk
  • 12 ounces white chocolate, chopped
  • 2 cups all-purpose flour
  • 0.75 teaspoon baking soda
  • 0.25 teaspoon baking powder
  • 0.75 cup white sugar
  • 0.5 cup unsalted butter, softened
  • 4 large eggs
  • 0.75 cup sour cream
  • 1.5 cups heavy cream
  • 0.75 cup fresh raspberries
  • 3 tablespoons white sugar
  • 1 (8 ounce) package cream cheese
  • 0.25 cup unsalted butter, softened
  • 6 ounces white chocolate, melted
  • 2 cups powdered sugar
Instructions:
  • Preheat your oven to a cozy 350 degrees F (175 degrees C). Prepare two 9-inch round baking pans by lining the bottoms with parchment paper for easy release or greasing them with a touch of shortening and dusting with flour.
  • Combine milk and chopped white chocolate in a microwave-safe bowl and heat in 30-second intervals until melted and smooth.
  • In a small bowl, mix together flour, baking soda, salt, and baking powder.
  • In a large mixing bowl, cream white sugar and butter until light and fluffy. Gradually mix in melted chocolate mixture and vanilla extract. Beat in eggs one at a time, then add flour mixture and sour cream alternately. Pour batter evenly into prepared cake pans.
  • Bake in the preheated oven for 30-35 minutes until a toothpick inserted into the center comes out clean. Be careful not to overbake. Let cool for 15 minutes, then remove cakes from pans. Chill in the freezer for 30 minutes for easy layer cutting.
  • In a small mixing bowl, mix together heavy cream, raspberries, and sugar until stiff peaks form. Chill in the refrigerator until needed.
  • In a large mixing bowl, combine cream cheese and butter and beat on medium speed until smooth. Stir in melted chocolate and vanilla until fully incorporated. Slowly add powdered sugar, beating until the frosting is light and fluffy after each addition.
  • Split the cake layers in half to create more layers. Begin by placing one layer on a cake plate and generously spreading one-third of the delightful raspberry filling over it. Repeat this process with the two remaining layers and the rest of the filling. Finally, top the cake with the last layer and generously frost the entire cake with luscious cream cheese frosting.
